Butter puff pastry (simple, unfolded croissant without a full butter korsvet)

300 grams high-protein flour
40 grams sugar
5 grams instant yeast
160 grams cold water
30 grams butter
1 teaspoon salt

120-130 grams unsalted butter, this is what makes it fragrant (you can substitute margarine, but it's saltier).

*Don't be afraid of overproofing; let it rise completely before baking; the result will be hollow.

This is very buttery and crispy, in fact, it rises more lightly than using korsvet margarine. I thought the honeycomb wouldn't come out (you can see it at the end of the video). It turns out it did, although it's irregular because it's made without folding like a croissant.

300 grams bread flour (can be replaced with all-purpose flour)
40 grams of sugar
5 grams of yeast
160 grams of cold water
30 grams of butter
1 tsp salt

120-130 grams of unsalted butter

*140 grams flour (14 tablespoons)
*35 grams cocoa powder (I used Bensdrop) (5 tablespoons)
*1 teaspoon baking powder
*1/2 teaspoon baking soda
*1/2 teaspoon vanilla powder
*1/4-1/2 teaspoon salt
*230 ml UHT milk/or melted powdered milk
*60 ml cooking oil (I used coconut oil)
*150 grams granulated sugar (10 tablespoons) "I think this is the right amount because the cake will be drizzled with sweet chocolate ganache."
*1 teaspoon vinegar (I used apple cider vinegar) (can be substituted with lime, lemon, or cooking vinegar)

*Additional ingredients for ala-style chocolate ganache
150 grams chocolate bar
75 ml liquid milk

Moist, soft, and steamed brownies are recommended. 😍👍

Simple steamed brownies without a mixer and without eggs
50 grams of chocolate bar
5 tablespoons of cooking oil
10 tablespoons of medium-protein flour (approximately 100 grams)
3 tablespoons of cocoa powder
5-6 tablespoons of granulated sugar (approximately 75 grams)
1/2 teaspoon of baking soda
180 ml of warm, unsweetened milk
1/2 teaspoon of vanilla powder
1/4 teaspoon of salt

Glaze ingredients
60 grams of chocolate bar
2 tablespoons of milk

100 grams/ml water
3/4 teaspoon salt
50 grams unsalted butter
250 grams high-protein flour (high in gluten)

Egg yolk or egg yolk substitute for greasing.
Sugar for sprinkling.
And your favorite jam for the filling.

Bake at 210-220°C for 20-30 minutes.

Enjoy this dessert after storing it in the refrigerator overnight; it tastes much better and is sweeter even without sugar, and the eggy aroma is gone. Alternatively, you can make it in the morning and store it in the refrigerator to serve as an iftar meal.

75 grams rice flour (approximately 7.5 tablespoons)
40 grams all-purpose flour (approximately 4 tablespoons)
1/2 teaspoon instant yeast (fermipan, mauripan, etc.)

80 grams brown sugar (I used Seko Ndeso coconut sugar 😁)
1/2 teaspoon vanilla powder (more fragrant with 1 pandan leaf)
